Catalan Lobster

Cooking Recipes (Sardinia - Italy)


Ingredients:

  • 1 kg. Lobster girl
  • 1 kg. Lobster male
  • 2 lemons (juice)
  • q.b. seed oil and olive oil
  • 2 tablespoons white wine vinegar
  • q.b. salt
  • q.b. white pepper
  • 2 sprigs of celery leaves
  • 1 red tomato

Preparation:
Buy the lobsters ... still alive.
Crawfish boil, drain and cut into "slices", or open them to book in length.
Collect the brown sauce in a bowl with a spoon drawn from the head of the male and female eggs.
Mash the eggs with a fork, and mix with brown sauce, a pinch of salt and pepper, lemon juice, vinegar and oil, beating vigorously all over with a fork.
In a large serving dish, lay the pieces of lobster, placing the meat up, then dress, carefully pouring the emulsion obtained, so that it is well soaked.
Garnish with celery leaves, arranged in 2 / 3 points of the plate and cutting wire without removing the skin of the tomato knife (thereby creating a spiral), create 2 / 3 small roses.
