Rice - Sardinian Recipe

Cooking Recipes (Sardinia - Italy)


Ingredients:

  • 350 g of rice
  • 150 grams of pork
  • 80 g of sausage
  • 3 ripe tomatoes
  • 1 small onion
  • 1 pinch saffron
  • 1 / 2 cup dry white wine
  • broth q.b.
  • 80 g pecorino
  • extra virgin olive oil
  • salt
  • pepper

Preparation:
Cut the meat into small cubes, private and crumble the sausage skin, add the chopped onion and fry all in a pan with a couple of tablespoons of oil.
Stir with a wooden spoon and, after a few minutes, pour the wine, let it evaporate and then add the tomatoes peeled and chopped.
Salt, pepper and a pinch of saffron, then simmer on a medium heat, checking occasionally that the sauce does not shrink too much.
Meanwhile you heat some oil in another pan, preferably earthenware, then pour the rice, stirring carefully so as to absorb the seasoning, then lower the heat, add the sauce and continue stirring.
After 10 minutes, add the broth to be cooked and the risotto, stirring, cook for another 10 minutes on low heat (add more broth if the rice proves to be too thick or dry).
When cooked, sprinkle with grated cheese and bring to the table with a bottle of Carignan Sulcis pink, dry and velvety taste.
