Cocciula a Schiscionera

Cooking Recipes (Sardinia - Italy)


ingredients:
1 kg clams
1 clove garlic
1 bunch of parsley
a few slices of homemade bread
extra virgin olive oil
salt

preparation:
Make sure first that the clams are fresh, then wash them carefully under running water to remove any sand and pour in a pan.
Let them jump cheerful fire, expect them to be open, drain the cooking liquid and let it settle into a bowl.
In the meantime, washed, dried and chopped parsley together with the peeled garlic, sauté the chopped with a little oil in a clay pan, then add the clams with their shells and add the cooking liquid that you have made deposit in the bowl.
Cover the pan with a lid and cook over moderate heat for about 10 minutes.
Bring to the table and then served cocciula a schiscionera (clams of the fisherman), pour in soup plates in which you placed slices of toasted homemade bread.
Add a pinch of salt and accompanied with a bottle of chilled white wine.
